  • 2 ounces lean turkey ground
  • 1/4 can drained beans
  • 1/4 cup sauce tomato
  • 1/8 teaspoon ground chili pepper
  • 1/8  tsp cumin
  • 1/8 teaspoon freshly ground pepper
  • 1/8 teaspoon salt
  • 1/4 cup brown rice, cooked per package directions
  • 1/8 cup low-fat cheddar cheese, shredded

Preparation

Using a big saucepan, bring the rice and water to a boil. Reduce the heat to low, cover, and continue to cook at the lowest possible bubble until the water has been absorbed and the rice is cooked through. Remove the pan from the heat and set it aside for 10 minutes, covered.

Meanwhile, in a large nonstick skillet, sauté the ground turkey until it is cooked through, breaking up the meat as it cooks, stirring frequently.
