Just because a dish is vegan does not immediately imply that it is also nutritious. If you’re trying to lose weight, you have to be very selective about the meals you eat! So that you don’t get discouraged when preparing your next meal, I’ve compiled a list of 3 quick vegan meals for weight loss that are both nutritious and straightforward to prepare.

Chickpeas With Spinach

250 kcal (1 serving)     


  • 1 tablespoon olive oil
  • 1 clove of garlic
  • 1/4 cup chopped onion
  • 1 chopped medium tomato
  • 1 minced green chile
  • salt and freshly ground black pepper
  • 1/8 teaspoon powdered coriander
  • 2 ounces spinach
  • 3 ounces boiling chickpeas


On medium heat, sauté the onion and garlic until they are soft and translucent. Simmer for 3 minutes after adding the tomatoes, green chilies, salt, black pepper, and coriander, then add the spinach and cook for another 5 minutes, or until the spinach is wilted. Cook for another 5 minutes after adding the boiled chickpeas, then remove from heat and serve.


Salad with Corn and Tomatoes

160 kcal (1 serving)   


  • 2 chopped medium tomatoes
  • 1/4 cup chopped onion
  • 1/2 cup sweetcorn
  • 1 teaspoon fresh basil
  • 1 tablespoon olive oil
  • salt and freshly ground black pepper


Combine all of the ingredients in a large mixing bowl and serve chilled.


Potato Salad

200 kcal (1 serving)     


  • 7 oz. diced potatoes
  • 1/3 cup chopped scallions
  • 1 teaspoon mayonnaise vegan
  • 1 teaspoon mustard
  • pinch of sodium chloride


In a small saucepan, bring salted water to a boil. Cook until the potatoes are soft, about 10 to 12 minutes, uncovered. Take the potatoes out of the pot and set them aside.

In a small mixing bowl, whisk together the mayonnaise and mustard. In a large mixing bowl, combine the cooked potatoes, scallions, and the mayonnaise and mustard mixture. Stir well to combine. Toss well to combine flavors. Refrigerate for at least 1 hour, or until cool or cold.
